Uncle Julian’s peanut brittle
Spray a wooden spoon and a sheet pan with cooking spray. Mix 2 cups sugar and 1 cup light corn syrup.
Microwave on high for five minutes. Add 3 cups salted nuts (peanuts, almonds, cashews, or some
combination) and 2 tablespoons butter, stirring quickly. Replace the bowl in the microwave and cook on
high for up to 4 minutes or until the mixture turns a light brown. Add 2 teaspoons baking soda and 2
teaspoons vanilla extract, stirring quickly. Pour onto the sheet pan and spread evenly. Let set for 60
minutes and break into pieces.
